Seamus Griffin began his Retail career learning the trade in his father’s Convenience store from a very early age. It’s not a well-known fact but Seamus’s father had opened the first self -service store in Dublin in 1951. Seamus opened his first store in O Connell St; Dublin in 1997 and is now the Owner/Operator of 14 branded Londis stores with an array of food offerings that include 13 Insomnia Coffee to Go units, 1 Insomnia Barista Cafe1, 12 Subway restaurants, Griffin Food offering and also 5 Freshly Chopped stores employing close on 400 staff.He has constantly strove not just to develop and enhance his fresh food offering but to innovate.
